When you think of western cuisine, The first thing that comes to mind is America.
當你想到西餐料理,第一個想到的國家應該都會是美國吧
My dad is from America.
While my mom is from Taiwan.
我的爸爸是美國人我的媽媽是台灣人
When I was a kid my dad used to tell me stories about his grandma and grandpa and what they used to cook for him.
我小的時候我爸爸都會跟我說很多關於他阿嬤阿公的故事也跟我分享他們會煮什麼給他吃
You see, my dad was born in the early 60s, and they didn’t have a lot of money back then.
我的父親大概是在六零年代出生的在那個時候很多人都是比較貧窮的
So people had to find a way to get by.
所以那時候的人都需要想辦法做出一些比較便宜的料理同時可以餵飽自己
Shepherds pie was a very popular and affordable meal back then, and still to this day.欸
牧羊人排在那時候是非常多人吃的、金錢上也是非常便宜的,到今天也是。
But making shepherds pie just the way it is is kind of boring, so I decided to add texture, culture and most importantly, heart.
我想要做牧羊人派但是,想要讓他更有特色
改變了裡面的口感、文化 還有心意
Instead of just having mashed potatoes and meat sauce I decided two shred my potatoes into thin slices, coated in butter, baked, then fried.
本來只是馬鈴薯泥還有肉醬,我把馬鈴薯做成一個千層的餅,我把馬鈴薯削成一片一片的薄片,加入奶油再拿去考再拿去炸。
For the meat sauce I decided to go classic with ground beef and tomato sauce.
肉醬還是非常傳統的義式肉醬,(牛肉加番茄尼和一些基本材料)
I wanted to add something different.
I wanted to add something different that has been in Taiwan for years.
Has been imprinted in my mom’s youth.
但是就算這樣子我還是覺得太單調我想要加入 我媽媽文化的料理。
一個從我媽媽年輕的時代就受歡迎的美食
Chinese fried chicken, also known as鹹酥雞.
The chicken is often paired with basil, which made me think of pesto sauce.
我做了鹹酥雞,通常鹹酥雞都會配九層塔,我決定把九層塔打成青醬。
So I took the basil and turned it into a dipping sauce for my fried chicken.
After frying and coating the fried chicken, I added diced potatoes to look like it was fried with actual potatoes.
再將炸好的鹹酥雞沾滿了青醬,外面裹腹責馬鈴薯丁,讓他看起來是用馬鈴薯炸的。
A lot of people often add mashed potatoes on top of their shepherds pie, But you see, I didn’t want this to be any old regular pie you could buy in a convenience store, I decided to make regular mashed potatoes but, with a twist.
I added heavy cream, butter, milk and cheese for flavor. Having more of a sauce consistency instead of a dense waxy texture.
大部分的人在牧羊人派上面都會加馬鈴薯泥但是我不想要他是那麼普遍的一道料理,我把馬鈴薯泥加入了鮮奶油鮮奶奶油跟起司
打成一個細膩的醬汁
For the plating, I decided to use handpicked edible flowers from a garden. With the sauce showing in small amounts giving the dish more depth. Adding tomatoes for color and To give the dish a more acidic kick to lighten the flavor.
擺盤的方式我選擇使用現摘的食用花,盤子的邊緣用我的醬汁去做裝飾,馬鈴薯泥跟青醬穿插著畫作品的邊緣放了幾片小蕃茄(解油膩)
With elegant lace cookies made with mashed potatoes and Parmesan cheese on the side of my dish
上面放了西餐常用的裝飾物(蕾絲餅)雷斯餅加入了帕馬森還有馬鈴薯泥
This dish represents My fathers heritage and my mothers heritage at the same time.
It is the literal representation of America being the big melting pot. Delicacies from both countries coming together as one represents me. And my dual citizenship.
這道菜對我來說代表了我爸爸的文化同時也代表了我媽媽的文化,對我來說這道菜代表美國大熔爐,也代表了我的雙重國籍還有身分
